Fruit and veg recipe ZOLA Couscous and spiced vegetables

INGREDIENTS

500g Couscous
500g pumpkin diced
150g pineapple diced
200g peeled sweet potatoes and cubed
100g mixed nuts
100 Raddish,diced
100g fruit chutney
Salt
Mustard seesds
Mixed spice
Coriander
4 green cardamom pods
5g sugar
Garlic cloves,crushed
Ginger
150g Tomato,diced
250ml vegetable stockĀ 

METHOD

Heat oil in a large pot ,add mustard seeds and nuts,when they begin to popĀ 
Add onion ,garlic,ginger ,mixed spice and cardamon.Stir-fry to release the flavours
Add all of your vegetables and a dash of chutney ,tomatoes, vegetable stock and sugar
Cook over a medium heat until veges are cooked but not too soft.Season and serve with couscous
In a separate pot,boil water and a bit of oil and pinch of salt
Add couscous ,when cooked ,take it ot
Serve couscous and your spiced vegetables
Garnish with a fresh coriander
