

Ingredients
800g Beef fillet
50g Peppercorns
20g Coriander seeds
20g Bread crumbs
10g Rosemary
10g Thyme
300g Green cabbage
50g Leeks
50g eagh Robot peppers
1 Red onion
200g Meilie rice
500ml Water
50g Cauliflower
50g Broccoli
100ml Cream
Salt & pepper to taste
Method:
Roughly grind the peppercorns and coriander seeds
Finely chop the rosemary and thyme
Mix the herbs and spices with the bread crumbs and crust the fillet
Roll the fillet in plastic and let it marinate for 30 - 45 minutes
Shread the cabbage, thinly slice the peppers, onion & leeks
Stir fry the cabbage and other sliced vegtables abd season with salt and pepper
Wash the melie rice until water runs clean
Bring water to a boil with some salt then add the mielie rice
Stir frequently to prevent rice from sticking
Break the broccoli and cauliflower into little florets and blanch
Once the water has reduced add the cream, broccoli and cauliflower and season
Reduce the cream by 1/4 portion the fillet to desired portions and fry in a hot pan to seal it then finish in an oven @ 180˚c to the desired level.
Serve all ingredients hot with a gravy.
