The theme this year for World Kidney Day is ‘PROTECT YOUR KIDNEYS – CONTROL YOUR DIABETES’.
It came to my attention during the holidays when I heard of someone who had taken ill and had been hospitalised and ended up on dialysis. When he was not feeling well and did not have the inclination to eat, he lived on bananas to keep up his strength, but in fact became more ill. It was only when he was in hospital that it was discovered that his kidneys were failing, and the worst thing he did was to eat bananas which is filled with potassium and affects the function of the kidneys. Neither he nor his wife knew this, and that is why it is so important for people to understand the function of the kidneys.
THE KIDNEY KITCHEN VISITS THE APPLE ORCHARD
Apple Tart
Dough.
1 cup flour
1/3 cup butter
5 to 8 Tablespoons ice water
Cut the butter in the four until it becomes small pieces. Make a well in the centre of the flour mixture and add 5 Tsp ice water. Fold the flour mixture over the ice water until the dough sticks together, if still dry add more ice water. Wrap dough in plastic wrap and let rest in the refrigerator for ½ hour. Roll out dough on floured surface and place in tart pan.
Filling
3 apples, peeled, cored and sliced
¼ cup sugar
2 T. cornstarch
¼ tsp cinnamon
(Pumpkin pie spice) overseas version
I presume it would be All spice in South Africa)
¼ cup apple jelly
Mix sugar, cornstarch and all spice together, sprinkle over sliced apples. Layer apples in the tart pan. Bake for 30 to 40 minutes or until crust is browned and the apples are soft. After the tart is cooled, melt the apple jelly over a double boiler. Brush top of the tart with the melted jelly.
