Protect your Kidneys

The Cape Kidney Association started the year on a rather low note!  We did not receive funds from the Lottery, and a few of our patients sadly passed away. 

One of our patients was found by the neighbour in the afternoon and looked as though she had passed away in the early hours of the morning.  She had been on dialysis for many years.  Another patient, a young man of 21 slipped into a coma on Boxing Day and passed away on the first day of January. 

Sadly, patients that have been on dialysis for many years become depressed and despondent, and if they have had a transplant, and the body rejects the kidney, they then have to go back onto dialysis for an indefinite period, some for many years. 

With World Kidney Day approaching on Thursday 11th March 2010, the emphasis is on awareness.  We at the Cape Kidney Association will be holding exhibition stands at various shopping centres to create awareness to the public about the importance of caring for their kidneys.  The way to do that is by regular check ups on Blood Pressure (BP) as well as having tests for diabetes.



The theme this year for World Kidney Day is ‘PROTECT YOUR KIDNEYS – CONTROL YOUR DIABETES’. 

It came to my attention during the holidays when I heard of someone who had taken ill and had been hospitalised and ended up on dialysis.  When he was not feeling well and did not have the inclination to eat, he lived on bananas to keep up his strength, but in fact became more ill.  It was only when he was in hospital that it was discovered that his kidneys were failing, and the worst thing he did was to eat bananas which is filled with potassium and affects the function of the kidneys.  Neither he nor his wife knew this, and that is why it is so important for people to understand the function of the kidneys.   

THE KIDNEY KITCHEN VISITS THE APPLE ORCHARD 

Apple Tart 

Dough. 

1 cup flour

1/3 cup butter

5 to 8 Tablespoons ice water 

Cut the butter in the four until it becomes small pieces. Make a well in the centre of the flour mixture and add 5 Tsp ice water. Fold the flour mixture over the ice water until the dough sticks together, if still dry add more ice water. Wrap dough in plastic wrap and let rest in the refrigerator for ½ hour. Roll out dough on floured surface and place in tart pan. 

Filling 

3 apples, peeled, cored and sliced

¼ cup sugar

2 T. cornstarch

¼ tsp cinnamon

(Pumpkin pie spice) overseas version

I presume it would be All spice in South Africa)

¼ cup apple jelly 

Mix sugar, cornstarch and all spice together, sprinkle over sliced apples. Layer apples in the tart pan. Bake for 30 to 40 minutes or until crust is browned and the apples are soft. After the tart is cooled, melt the apple jelly over a double boiler. Brush top of the tart with the melted jelly. 

This recipe has been taken off the International NKF website, and I feel sure that once tried, it will turn out just fine.  Try and enjoy.
