
Fruit and Veg Recipe for a Beet Root Salad

INGREDIENTS
A bunch of beetroot
80g bean sprouts
120g carrot, shaven
1 leek stalk, sliced thinly
3 radish, sliced thinly
1 red onion, sliced thinly
Mint leaves
1 tbl finely grated lime rind
60ml lime juice
2 tbl olive oil
METHOD
Cook beet until tender, rinse and let it cool
Place beet, sprouts, carrots, leeks, radish, onion and mint in a bowl
Combine the remaining ingredients in a squeeze bottle; shake well
Drizzle over salad; toss gently to combine
